Friends! It has been a while since I’ve posted a recipe – it’s been a little bit crazy here over the past few weeks but I can’t wait to get back to sharing our favorite recipes. Moving has meant packing, choosing what we are going to actually move (operation clear the clutter!), and relying on easy, nutritious recipes to keep us fed and energized!
I can’t live without my smoothie bowls! I’ve been topping them with homemade vegan, gluten free granola. It couldn’t be easier to make and is absolutely delicious – better than anything I could find at Whole Foods! What I love about it is the combination of sweet salty, crunchy and chewy, and that it’s not oily – super light and the perfect crunchy addition to smoothies, bananas, oatmeal, and more. It takes 5 minutes to throw together AND you likely have everything needed in your pantry! Hop to it 🙂
Preheat oven to 350F. Line a 13x9 pan with foil.
Combine all ingredients. Mix well.
Bake for 25-35 minutes, until fragrant. Be sure to stir every 5 minutes to avoid burning.
Let cool and transfer to air-tight container.
Healthy snack idea: sliced banana with 1T almond butter drizzle + 1/4c granola
