Labor Day Weekend in Arizona

Last Friday, Grant and I flew to Phoenix to spend the long holiday weekend with my parents. Before we left, I mentioned to Grant that it had been far too long since an airplane adventure – all of our previous summer travel has been local in the Midwest (except a last minute Nashville trip) so it was about time to escape!  We were both really looking forward to a weekend full of relaxation, family time, good eats, and new adventures. I think we accomplished it all!

We had a delicious dinner at LGO on Friday night – their pizzas, breakfasts, and pretty much everything is absolutely amazing. They have the cutest shop as part of the restaurant and I wanted to buy ALL THE THINGS! It’s kind of like Fido but bigger and with a larger selection (and wine store). Bonus – it’s right down the street from their home! My mom and I split a GF veggie pizza and salad with beets, pistachios, and other veggies. Cheers to the start of a wonderful weekend!

Saturday I went for a 5 mile run – it was so HOT! I left at 6:30 and can’t imagine running any later in the day. My dad zipped past me as I finished so I hopped in and we went for a little drive around the desert and stopped for iced coffee. I always enjoy our father-daughter time!

We spent Saturday out and about – running fun errands and exploring new areas of town. So many palm trees! We stopped at ChopShop for lunch and we all agreed it’s a must-visit every time we are in AZ. Delicious, clean eats packed with flavor and an amazing menu of options!

My parents have been raving about Otro – a Mexican restaurant in a trendy area of town. It was incredible! Margaritas were a must.

Sunday we played TopGolf and had bloody marys. Breakfast of champions. Am I right?! There was a huge bar full of pickles, hot sauces, bacon, olives, and more that you could add to make it your own. We also learned that I am horrible at golf. Another neighborhood favorite is Ingo – famous for their burgers. When it’s 105+ degrees, the last thing I want to think about is a burger. So… we shared homemade potato chips and I had the best avocado toast in the world. It was topped with avocados (obviously) AND sliced tomatoes, grapes, burrata, EVOO, and S+P. Still dreaming about it!

Given that it was Sunday, we were definitely having Sunday Night Dinner at home. We put together a delicious appetizer sampling that we enjoyed with cocktails on the balcony while watching the sunset over Camelback Mountain. My dad made grilled flank steak, a flavorful white bean and tomato salad, and coconut ice cream for dessert.

I was so impressed with how well my mom is moving around! We even walked 2 miles twice (!!)! She has been nothing but positive during her recovery and I know every day she is getting stronger and back to her self. It was so wonderful to spend time together and I left feeling relieved that she is doing so well 🙂 We had lots of quality time full of laughter and love. There is nothing better!

On Monday, we drove out to The Boulders area of Arizona and I loved seeing true desert. I know it’s all one big desert, but the terrain and HUGE cacti (?) are simply stunning. A different kind of beautiful for sure! We had lunch at Diego Pops – everything about the restaurant was adorable and totally my style. Tacos, family, and chips. What more does a girl need?

Back home and missing this view. So thankful for 4 days spent with my favorite people! 30 days and counting until our next visit!
