August 2016 in Review

What a month! August brought long summer days, new opportunities, and time to truly feel settled in our home. It was the first month we didn’t go ANYWHERE – which is great and all, but I am ready for an adventure. Good thing we are headed to Phoenix for the weekend! I’m feeling so ready for fall and totally over summer (my least favorite season AND one of the hardest seasons of life so far). It’s sure to be filled with fabulous work opportunities, tons of travel (I’m looking at you, NYC, Nashville, Atlanta, Chicago, Phoenix, Milwaukee, and Houston), family […]

Kitchen Sink Bread

HAPPY FRIDAY! We’re 1 week through August and after last weekend’s little breakdown/epiphany that we aren’t moving back to Nashville anytime soon, I’m feeling much better – rejuvenated and ready to take on life up here. AND it’s almost fall which means beautiful Midwestern colors and FOOTBALL. I also shared good news on Instagram this week – I accepted a job offer with The Blake School and Sally’s Baking Addiction, and am incredibly excited to get started. Both of these positions fill my heart with so much joy and I know this means for positive changes all around. All of […]

July 2016 in Review

I know it’s crazy and I say this every month… but WHERE did July go?! Between visitors (please come visit us) to quick trips and all sorts of adventuring, time flew by! Get ready for photo overload 🙂 A few random thoughts about the month: We are LOVING this 5-ingredient banana ice cream – it’s putting my food processor to the test! Is it football season yet? I made this vegan/GF chili recipe twice in anticipation of fall I’m back to running! FINALLY getting my groove back. PR-ed my 5k time – 26:34! I joined a bootcamp class at Crossfit […]

The Schaefer’s in MN!

Three (!!) weekends ago, my parents came to visit our new home! Last time they were here, we spent our time unpacking, organizing, cleaning, and hanging about a million things. This time, we were on a mission to explore the city and relax… and not unpack a single box! We kicked off their visit with drinks downtown Minneapolis with some friends who just so happened to be in the city for college visits. It’s always wonderful when visits overlap! Up next? More drinks. This time at Tattersall – it’s a really cool distillery that’s in a warehouse. The first time Grant […]

June 2016 in Review

Well, we survived our first FULL month in MN! Thankfully, the weather has been nothing but wonderful and we’ve started to find a routine that works. Because Grant travels Monday through Friday most weeks, I have weeknights to myself – often spent working, but sometimes spent exploring. The highlight of this month was meeting some really nice friends – helping to make our new city feel like home. We have spent tons of time outside, on the water, and adventuring. I’ve tried to keep it all together and be strong for both of us, finding some semblance of normalcy in everyday […]

Happy Father’s Day!

To my amazing dad, Happy Father’s Day! I’m a better person because of your impact on my life – your kindness, determination, work ethic, love for food and chilled rosé, and personality have been graciously passed to me. And I am so thankful for that. It’s the biggest compliment in the world for people to tell me I’m just like you – which happens very often! When I think of what a “dad” embodies, you check all the boxes and three million more. I could go on and on, but here’s a short list of reasons why you are simply amazing: […]
